Ash Wednesday's Burial of the Sardine at Carnival in Santa Cruz de Tenerife is meant to herald the end of Carnival, only it doesn't. It isn't a burial, it's a cremation; the clergy aren't real clergy, the wailing widow's aren't real women, even the chicharro (sardine) turned out to be an Atlantic horse mackerel!
